Pooja Dhingra, owner of the very popular Patisserie chain, Le 15 in Mumbai, started her business when she was 23 (2010) and now has made a turnover of 1.55 crore a year. She runs Studio Fifteen, cookery center which boasts of students from all parts of the country.
A 1986 born woman, Pooja Dhingra had passion towards baking from her childhood as her father owned a Mexican restaurant and she had seen her mother Seema running a baking business from home.
At the age of 18, she went to a law school. On seeing big books in front of her, she decided to quit law and headed off to study hospitality management at Cesar-Ritz in Switzerland, the chocolate capital of the world. Dhingra got training at Le Cordon Bleu, one of the finest culinary schools in the world.
Returning to India, in March 2009, she started testing her Parisian recipes in her mum’s kitchen. As the local produce did not give her the standards she expected, she started mixing imported ones with local produce. Finally, she got the exact taste she expected and decided to set up a shop.
Seeding a capital amount of Rs 10 lakh from her family, Dhingra started her business in the name of Le 15, in March 2010. Equipped with a strong will and the best of knowledge, Pooja was all of 23 when she began her entrepreneurial journey. Undeterred, she strode ahead and Le 15 now has 4 branches in Mumbai.
Dhingra has also written her best recipes as a book, ‘The Big book of treats’. The book won 2nd place at the World Gourmand Cookbook Awards. Two books are underway. A book on healthy recipes (read: whole grain, dairy-free, gluten-free, the works), using ingredients typical to the Indian kitchen and another about her thoughts on running a business (the world).
